Arvenstube
Centrally placed in Sils Maria, this hotel restaurant focuses on local dishes.
We begin with the valley, and we are not dogmatic about where the rest of it comes from.
The Arvenstube is the Schweizerhof's old stone-pine room, and it is where the Engadin comes to the table first: cheese from the alp above the village, char from the lake below it, barley, game, walnuts, bread proved slowly. Most of what we serve is grown, grazed or ripened within sight of the pass. When something better arrives from further afield, a pepper from Kerala, olive oil from the Ligurian coast, wine from just over the Bernina, we welcome it and we say where it came from. Local is our foundation, not our fence.
Most of it travels less than the guest who came to eat it.
Our larder is drawn tight to the pass: these four are never anything else. Beyond them, we choose the best hand we can find and name it on the menu.

Join us at the table
The dining room seats forty. We hold a few tables for guests who arrive without notice, but an evening here is best planned.
